Graveyard taco dip is essentially a Halloween version of layered taco dip.

Traditional taco dip normally includes refried beans, guacamole, sour cream, salsa and cheese. For graveyard taco dip, each serving of dip is layered into clear cups and decorated with tortilla chips turned into gravestones and ghosts.

Ingredients layered together create the “ground” while tortilla “gravestones” are pressed into the top of each cup.

Refried Beans

Use store-bought refried beans or make them from scratch. Stir taco seasoning into the beans for extra flavour.

Guacamole

Creamy guacamole adds a pop of green colour and a smooth texture to each bite. Store-bought guacamole works well for an easy dish but homemade guacamole tastes delicious too.

Choose a thicker guacamole instead of runny guacamole so layers don’t become soggy.

Sour Cream

Cool sour cream creates a white layer between the guacamole and salsa. It also helps balance flavours by cutting through the seasoning in the beans.

Equipment you’ll need includes:

  • Small clear plastic serving cups
  • Mixing bowl and spoon
  • Cheese grater (unless you’re using store bought grated cheese)
  • Clear cups allow guests to admire the colourful layers inside. If you can’t find clear cups, any bright disposable cups will work.

How to Make Layered Taco Dip Cups

Step 1: Prepare The Refried Beans

Add your refried beans to a small bowl and stir in taco seasoning until evenly combined.

Add a teaspoon of water if your beans are very thick. This will make them easier to spoon into the serving cups. Try to keep the mixture thick so it holds its shape inside the cup.

Spoon a layer of refried beans into the bottom of each cup. Use the back of a teaspoon to gently smooth out each layer. Take care not to smear the bean layer around the sides of the cup.

Repeat this process until you have a neat layer of refried beans at the bottom of each cup.

Step 2: Add Guacamole Over The Bean Layer

Use a spoon to carefully spread the guacamole toward the edges of each cup. You want to create a full stripe of guacamole without pressing too hard and sinking the layer into the beans.

Repeat this step until each cup has a layer of guacamole neatly arranged on top of the refried beans.

Step 3: Layer Sour Cream Over The Guacamole

Using a small spoon, carefully spread the sour cream on top of the guac being careful to keep the sides nice and neat.

Repeat this process until there is a layer of sour cream neatly resting on top of the guacamole in each cup.

Step 4: Add Salsa On Top Of The Sour Cream

Before spooning salsa into each cup, drain away any excess moisture.

Carefully spread the salsa over the sour cream to create a red layer and repeat until each cup has salsa layered on top.

Step 5: Scatter Grated Cheese Over The Salsa In Each Cup

Grate your cheese and sprinkle over the top of the salsa. 

Step 6: Top Your Taco Dip Cups With Spooky Gravestone Tortilla Chips

Decorate each taco dip cup by pressing a tortilla gravestone into the topping. Add tortilla decorations just before serving so they don’t soften.

Arrange cups on a wooden board and surround them with extra Halloween tortilla chips. You can use bat, ghost and gravestone shaped chips for dipping.

You can’t really go wrong with these easy dip cups, they’re so easy! But here are a few tips to ensure everything goes as smoothly as possible:

Use Thick Ingredients

Use thick salsa, sour cream and guacamole instead of watery alternatives. They’ll quickly blur together and ruin your neatly layered cups.

Drain away excess moisture from each ingredient before layering it in the cups.

Keep Cup Sides Clean

Avoid dragging the spoon down the side of the cup as you work. Instead, use a spoon or piping bag to add ingredients in the centre of the cup before spreading them outwards.

Don’t Overfill Cups

Be sure to leave room at the top of each cup for grated cheese and tortilla decorations.

Once you add toppings, guests will begin sticking chips into the cups. Overfilled cups are more likely to spill than ones with space at the top.

Chill Before Decorating

Briefly chill layered cups before pressing in tortilla decorations.

Cover leftover taco dip cups and refrigerate them as soon as possible.

Ideally, they’re eaten within one to two days. The salsa, sour cream and guacamole will begin to blend into each other the longer they’re stored.

Remove tortilla decorations before storing leftover taco dip cups in the refrigerator. Chips will lose their crispness if they’re left inside the dip for too long.

These individual graveyard taco dip cups are layered with seasoned refried beans, guacamole, sour cream, salsa and cheese, then finished with a crispy homemade tortilla gravestone.

Ingredients

  • 400g refried beans
  • 1 tablespoon taco seasoning
  • 250g guacamole
  • 250ml sour cream
  • 250g chunky tomato salsa, with excess liquid drained
  • 100g grated cheddar cheese or Mexican-style cheese blend
  • 8 homemade tortilla gravestones
  • Extra homemade Halloween chips, for serving

Instructions

  1. Prepare the tortilla gravestones using my homemade Halloween chips recipe
  2. Allow the gravestone chips to cool completely, then use a black edible food pen to write “RIP” on each one. Set them aside until serving.
  3. Add the refried beans to a bowl and stir in the taco seasoning until evenly combined.
  4. If the refried bean mixture is too thick to spoon easily, mix in one or two teaspoons of water. Keep it fairly thick so it forms a sturdy bottom layer.
  5. Divide the seasoned refried beans evenly between eight small clear serving cups.
  6. Use the back of a teaspoon to gently smooth the beans into an even layer.
  7. Add a layer of guacamole to each cup, spreading it carefully toward the edges.
  8. Spoon or pipe a layer of sour cream over the guacamole.
  9. Drain any excess liquid from the salsa, then divide it between the cups.
  10. Sprinkle the grated cheese over the top of each cup.
  11. Cover and refrigerate the layered dip cups for around 30 minutes, or until ready to serve.
  12. Just before serving, press one tortilla gravestone gently into the top of each cup.
  13. Serve with extra homemade ghost, bat and gravestone Halloween chips for dipping.
